beetroot-salad with grapes, goatcheese, pineseeds and arugula

preparation time: 10-15 minutes

difficulty level: medium

ingredients for 2 servings

500 g cooked beetroot


2 handful arugula


250 g grapes 


4 tbsp. pine seeds / sunflower seeds / pumpkin seeds


1 package goat-cheese ( approx. 150-200 g )



for the dressing:


2 tsp. mustard


4 tsp. maple-syrup / honey


some olive oil and cold water


salt and pepper 


step 1

cut the beetroot into cubes, slice the grapes into halves and mix it with the washed  arugula. crumble or cut the goatcheese into pieces and add it to the salad as well. 

step 2

roast the seeds on medium heat without oil. take care so they do not burn. pine seeds burn really quick. if you are brave enough you can mix your dressing while you roast them or at least prepare everything.

step 3

if the seeds are roasted and the dressing done, mix everything together and you are ready to serve it. goes perfect with some bread and maybe a glass of red wine. enjoy every bite of it.
