red lentils kind-of-curry

ingredients for 2 servings
250 g red lentils
300 ml water
1 red onion
2 cloves of garlic
1 thumb-sized piece of ginger
1 can coconut-milk ( approx. 400 ml / low-fat upon need)
spices: curry / curcuma, salt and pepper, chili, cumin, coriander
1/2 lemon ( Juice )
some oil for the pan
wash the lentils in a fine sieve and cook them in 300 ml salted water. in the meanwhile peel and cut the onion, the garlic and the ginger into little pieces. stir the lentils occasionally
heat up a pan with some oil - while you wait yo cam cut the zucchini. fry all the veggies together for a few minutes ( add some salt and pepper here already) before you add the cooked lentils.
add the can of coconut milk and your spices - stir it well and check if the taste is how you expect a curry to taste. if not, get creative with your spices. let it cook for 10 more minutes on low heat so the spices can soak into the dish. before you serve it, add the lemon juice before you stir it one last time in the pan. this dish taste also cold and so it´s compatible as a mealprep-dish.
